Wherever this got started, it's bullshit. No self-respecting person (like myself) of Italian heritage would ever do this before the fact. It suggests that - if you're not Italian and don't know better - you'd be preventing pasta from sticking, but this method is generally considered ineffective by culinary experts.
Adding oil to boiling water does not prevent pasta from sticking together during cooking because the oil floats on the water's surface. The oil can coat the pasta, which then prevents the sauce from properly adhering to it after draining.
The most effective ways to prevent sticking are to use a large pot with sufficient water and stir the pasta frequently, especially in the first minute of cooking. They also say that adding oil is useful for preventing the pot from foaming up and boiling over, but that's bullshit, too.
Why do you suppose your mother and grandmother had that big wooden spoon that they usta chase you around the house with? It wasn't just for spanking yer ass - it also stopped the pot from boiling over. 'Nuff said...

ReplyDeleteI'm not Italian, but my calorie-conscious mother taught me that if you bring the water to a full boil before adding the spaghetti you hardly even have to stir it to keep it separated. Always wondered why anybody added oil. Well, some people don't digest fats well and for them the oil may work as a laxative. That's the only plausible reason I've found!
