Another lie we've wined about with for too long...

An estimate reveals that 90% of wines are supposed to be consumed within one year, while 99% should be consumed within five, otherwise they go 'bad'.
Aging wine is a risky and often expensive endeavor, as there is no guarantee that the wine will improve with time. In some cases, the wine may even spoil or turn into vinegar.
So, which wines should be aged? Generally speaking, wines with high tannins and acidity are good candidates for aging. These wines have the structure and backbone to develop complex flavors over time. Some wines that age well include Cabernet Sauvignon, Pinot Noir, and Syrah.
 

On the other hand, wines with low tannins and acidity, such as most white wines, are not suitable for aging. These wines are best enjoyed young and fresh (kinda like women?) when their fruit flavors and aromas peak.
