I'm not whay you'd call a 'foodie', but I do know my way around a good bell pepper...

Many people wonder why green, red, orange and yellow bell peppers don't cost the same amount in grocery stores. Some even argue that since they taste the same, they should be priced the same. In reality, the different colors don't taste the same - nor do they have the same nutritional value. Bell peppers vary in more ways than color. The color of the pepper you choose should depend on what you will use the pepper for.
All bell peppers start out green and change color as they mature. If it's not picked, a green pepper may become yellow, orange, or red, depending on its varietal. The longer the pepper stays on the vine, the sweeter it becomes and the more nutritional value it has. Since they were not fully ripe when picked, green peppers are less nutritious than peppers that have matured to another color. However, green peppers do have a longer shelf life than the other colors.

If you're planning on making yourself a good sausage and pepper sandwich, there's only five things you need:
1. Good sweet or hot Italian sausage. Premio or Johnsonville Brands are both  always a safe bet if you don't know a good Italian butcher.
2. A nice, juicy yellow onion. Yellows are best for their sharp taste without being overpowering.
3. Tomato sauce or tomato paste.
4. Good, ripe peppers. I prefer to use green and red, but you choose.
5. Good hard roll, Italian bread or a large baguette.
Here's a very good recipe that pretty much mirrors my own, that I learned from myGrandmother. I'd leave out the broth:

If you do buy jar sauces, I recommend these guys. Tastes as close to my own home made, and it's great if you make your own pizzas - again, as I do...
