The chart left out one the most important of all sauces - Aglio e olio.
And it was always SAUCE - not gravy, except maybe once in a while if you added pork neck bones, meatballs and sausage.
While we're talking about it, lemme say this about that.
When I was a kid (and I grew up in an italian household, on an almost entirely Italian block in a predominately Italian neighborhood), there was no such thing as 'pasta' as it is referred to today.
There was spaghetti (anything long), macaroni (anything short), Lasagna (always had meat in it), gnocchi (potato macaronis - go figure) and Pastina (for when we were sick).

That was it. And noodles? They were either something in Chinese food or that thing they call 'egg noodles', but that's a story for another day. Juss' sayin'...

I guess my homemade sauce would be some mix of bolognese-pomodoro-arrabiata. More meat than sauce, but the meat is not simmered in wine. Who has that much wine to waste? Gets herbs and pepper flakes, usually a yellow onion and some EVOO softened in the pan before the meat goes in, and a good grating of P-R cheese just before serving. Throw in some fresh torn basil then too if you have it. But you ALWAYS use mostly pork, and you ALWAYS put a couple of good cut bones in there. Canned tomatoes from Italy, hand mashed in the big pot and slow simmered, use the can juice but take away enough for a bloody Mary. A couple cloves of diced garlic in there too.

Never heard spaghetti sauce referred to as gravy until some New Yorkers moved into the neighborhood sometime in the 50's....upstaters....even the city dwellers that I knew called it sauce....best chef in the county, at a place on Madeira Beach called the Madeira Beach Club, named Rocky, always called it sauce....specialty was spaghetti and meat balls with meat sauce....moved up to Indian Rocks and opened a spaghetti joint called the Pub.....was there for a long while til the Rock died....still there but no longer Italian....too bad...I miss the old spaghetti joints where you could always get a great tasting, cheap, and satisfying meal that included salad and excellent bread, at no charge....can I just throw in Fuck joe biden....thanks....
